Very vegan Christmas

I was in charge of Christmas dinner. Which was a 'meatloaf' made with lentils, mushrooms, nuts, sweet potatoes and Worcestershire sauce. With a side of Brussel sprouts, butternut squash, nuts and crainsins with maple syrup and cinnamon. Big hit. And Sainsbury mince pies.

This is the 8th Christmas since I moved to NI. I have only missed two Christmases in West Virginia--the two years I came in Jan/Feb  to go to Florida.

During the 15 Christmases I was in Pennsylvania, I think I missed only two Christmases with mom. The first year I lived there and the year my dog died.

Mom goes all out at Christmas so it is lovely to be with her to share her favourite holiday.
