I cooked!

Mom has been cooking for me since I got here. Every time I suggest helping out, she's all "No, you sit down and rest, this won't take long."

Today I insisted and made a spinach-quinoa-egg-feta cheese dish that she really liked. Yay! All credit goes to Sandy Gargus, whose recipe I stole. She teaches two classes at Main Line School Night, spring and fall. I've taken both and have thoroughly enjoyed the recipes I've gotten. She's a member of the same CSA we belonged to, so she used the same veg we were getting every week.
